For those of you looking for a loaf with a lighter crumb, The Woodlander is a bread made with baker's yeast but slow-fermented to bring out all of the rich flavours of my beautiful, artisan-milled flours.
This bread is made with organic, unbleached and stoneground flours, with 50% nutritious wholemeal, giving it a golden brown colour and a rich, nutty taste. Coated on the outside with pumpkin and sunflower seeds which become aromatically toasted in the baking, with a light, springy crumb and a thin, chewy crust. It's perfect for daily sandwiches and toast.
This bread is slow-leavened and takes two days to prepare and bake fresh to order.
Ingredients (allergens in bold): wheat flour, water, pumpkin seeds, sunflower seeds, sea salt, yeast (with emulsifier: sorbitan monostearate).
Whilst every care is taken in the handling of my ingredients, my bread is baked in an open kitchen and may contain traces of sesame, dairy or nuts.
