Seasonal Sourdough - Scandinavian Buttermilk & Einkorn

This seasonal sourdough is made with fresh, raw buttermilk from Fen Farm Dairy in Suffolk. Made by simply churning the cream to separate it into butter and buttermilk, it has a full, tangy flavour and is packed full of nutrients.
Combined with 100% organic flours, including 40% wholemeal einkorn. With its rich, golden colour, einkorn is one of the earliest cultivated varieties of wheat. It has a toasty, nutty flavour and is known for its higher level of proteins, minerals and B vitamins and for being easy on the digestive system.
Finished with a light seasoning of roasted caraway seeds, as is traditional in Scandinavia, this bread has a light, soft crumb and a thin, crispy crust. Great for sandwiches, it pairs brilliantly with goat and sheep milk cheeses, beetroot, apple chutneys and pork meats.
This is a slow-leavened sourdough and takes two days to prepare and bake fresh to order.
Ingredients (allergens in bold): 100% organic wheat, einkorn and rye flour (gluten), raw buttermilk, water, sea salt, caraway seeds.
Whilst every care is taken in the handling of my ingredients, my bread is baked in an open kitchen and may contain traces of nuts or sesame.
